- 申请时,托福为116分。AP5门满分。无SAT或ACT分数。

Three factors govern the protein denaturation when baking meringues: the water content of egg whites, the sugar content, and the temperature. While the first factor is controlled entirely by the hen, two variables remain to the aspiring baker. I was experimenting with these variables, seeking to produce the perfect meringue, the last piece of decoration that would lift my French Mont-Blanc cake from exquisite to flawless. Still, the smell of burning sugar indicated yet another failure. I translated the fumes in my head, imagining a string of warning python code alerting the programmer:

TimeError: Ingredient white sugar is overbaked”.

Now I looked at my imperfect meringues. Following my programmer’s instinct, I believed that I must did something wrong in previous steps.
From the third to seventh attempts, I tested the relationship between meringues’ textures and eggs’ temperatures. In the eighth attempt, I began to calibrate the pH value of egg whites by adding lemon juice. In further attempts, I filtered the egg whites, optimized the lemon juice concentration, invented a new way of whipping, and learned from a paper how to quantitatively measure egg qualities by using the industrial standard, the Haugh index. I hypothesized, experimented, failed, recorded, analyzed, learned, and repeated, until I got the milky white meringues, crispy outside and creamy inside, with neither holes nor tunnels, the impeccable embodiment of the perfect form of meringues. I have stamped the programmer’s instinct on my mind and learned to harness the factors that I can control through patience and perseverance.
